Cheesemaker Michael Lee celebrates the nuances of the milk as it changes from week to week and month to month. With a minimum of intervention, Michael creates, ages, and markets all of our handmade raw and mixed milk cheeses. Inspiration has come from the traditional natural-rind goat cheeses of the French Pyrenees, but our product is decidedly a reflection of our tiny farm in West Cornwall, Vermont.
